Root vegetables have been a staple of regional gardens, storing well over the cold winter months and providing a wide range of colours and tastes. Here are the varieties we love to grow:

Beets

Chioggia Beets

An heirloom variety with candy cane striped red and white sections. Green leaves and uniform roots make this a favourite variety

Bulls Blood Beets

Great for both the deep red coloured leaves and tender roots, this is a versatile beet and is sometimes grown just for its greens

Touchstone Gold Beets

Yellow coloured beet that won’t stain everything it touches. Good growth habit
Carrots

Amsterdam Carrots

A cylindrical carrot that can be harvested as a baby carrot or allowed to mature for a long slender root. Sweet with tender flesh

Rainbow Carrots

This is a single variety of hybrid seed that produces a white, yellow and orange coloured roots generally 7-9 inches in length

Purple Haze Carrots

Purple skinned with an orange core, this imperator carrot variety grows 7-9 inches in length
Radish

Easter Egg Radish

Grow a mix of white, pink, purple and red radishes that stay firm and crisp for a long time

Sora Radish

Beautiful shiny red 1″ globe shaped radishes are early to mature and grow better in the heat than other varieties

French Breakfast Radish

Other Root Vegetables

Celeriac

Easier to grow than celery with a similar taste, you can use both leaves and root in soups, stews, stir fry, and other dishes

Jerusalem Artichoke

Also called sunchoke, this native crop requires virtually no care or work. Plants can spread, grow over 6′ tall and are harvested in the fall after a frost.

Garlic

We plant two varieties of hardneck garlic in the fall for a harvest the following summer. Garlic is easy to grow, helps keep unwanted insects away from the garden
