Ground cover plants serve multiple purposes. They protect an area from erosion and drought, beautify the area, and can even provide edible produce depending on the variety. For those looking for edible ground covers, plants like lemon thyme and pennyroyal mint are great as low lying and creeping ground covers. Thyme comes in a variety of appearances, so look for one that catches your eye. For a little bit taller ground cover, consider plants like mint and lavender to provide an attractive, low maintenance display. Finally, strawberries, oregano and wintergreen can also be used as edible ground covers.
